First Impressions

The Kouhei-Shinmatsu is a small collection comprising of a bunka and pettythat boast an immediately impressive edge out of the box and a great looking finish in both silver and kurouchi versions.

Beauty

There are two available finishes to suit your preferences and both share the same tsuchime markings and deep kanji running down to the shinogi and subtle brushed jiganeand polished core ZDP189 steel.

Depending on what you prefer, you can choose and either would look great in your kitchen.

In Hand

Suncraft’s knives often show their attention to detail in the areas around the heel and spine and these are no different with subtly rounded edges making the knives comfortable to hold for extended periods and the traditional octagonal wa handles are comfortable.

Durability

ZDP189 core steel is extremely durable and when treated to the hardness of this range (approximately 65-66HRC) the edge retention is excellent and will last a longer time between sharpening than many knives.

Ease of Care

ZDP 189 can be a little difficult to sharpen but you shouldn’t have to do it very often, a few strokes with a ceramic sharpening rod will keep it in tip top condition between whetstone sharpening.

Given the extremely high HRC rating of the steel you shouldavoid lateral stressesfrom twisting or trying to pry open foodsand as long as you cut with care (a good general guide anyway!), these knives will last a long time between sharpens.

Excellent all round finish quality and the high level of hardness of the ZDP189 steel makes these knives a great choice for those prioritising edge retention and the quality finishing touches and attention to detail from Suncraft make them a great choice and impressive value overall.
